Sustainability Triumphs: Catering Innovations at the 9th Our Ocean Event

The 9th "Our Ocean Conference" (OOC-9), held in Athens, was one of the most significant international environmental conferences ever hosted by Greece, attracting distinguished guests from around the globe.

The catering for the conference was managed by Aria Fine Catering in partnership with True Catering. "With thorough planning, meticulous design, and outstanding collaboration with the True Catering team, we successfully met the high standards of this conference. As emphasized during the event, and a belief we hold firmly, synergies are our future, and only through teamwork can we move forward."

The 9th "Our Ocean Conference" aimed to tackle critical issues such as sustainable tourism in coastal areas and islands, reducing marine pollution from plastics and microplastics, promoting green shipping, and facilitating the green transition in the Mediterranean. This significant event, organized by the Greek Government at the Stavros Niarchos Foundation Cultural Center (SNFCC), brought together 1,600 participants, including heads of state, ministers, researchers, oceanographers, and representatives from international organizations.

Executing the 9th "Our Ocean Conference" was a major and challenging task. Strict security regulations and the presence of numerous catering stations throughout the SNFCC heightened the complexity over the two-day conference. Notably, we avoided the use of plastic or paper utensils, opting exclusively for reusable glass and porcelain materials.

Greek-Inspired Haute Cuisine at the International Archons Conference by Aria Fine Catering

The 4th International Conference of Archons on "Protection of Religious Freedom, Democracy & Human Rights" took place at the Zappeion on May 28 and 29, with Aria Fine Catering proudly serving the distinguished guests.

Aria Fine Catering had the honor of organizing the farewell gala dinner on the evening of Wednesday, May 29. This event offered a unique culinary experience to prominent figures from politics, science, and business.

The conference emphasized the critical importance of religious freedom, democracy, and human rights for the foundation and existence of our societies, attracting Archons from around the world. The concluding gala dinner provided guests with a meticulously crafted high-end menu, designed by Aria's executive chef, highlighting Greek flavors with a modern, creative twist.

Standout dishes included an innovative “moussaka” in a spring roll with beef, eggplant, and graviera béchamel, grilled octopus on shrimp chips with bottarga cream, and a roasted lamb rack with an herb crust, tomato juice, eggplant puree, and crispy potato terrine. Among the desserts, the standout was the pavlova “ala Spetsiota” with a sweet twist on the classic Greek recipe, featuring almond cookies, cream, fresh red fruits, and kaimaki ice cream.
The exquisite menu was complemented by fine wines and cocktails, and the flawless organization by the Aria team ensured a smooth and memorable dining experience.

Special thanks go to Mr. Vasilis Tsigonakis, Head of Operations of Aria, and Ms. Ria Arvanitidou, Event Manager, for their outstanding organization and professionalism. Aria Fine Catering once again demonstrated its exceptional organizational skills, ensuring everything was executed with precision and consistency, providing guests with an unforgettable evening at the Zappeion Hall.
